Ingredient Story: Cocoa Butter
Cocoa butter is edible vegetable fat extracted from the cocoa bean, and has flavour and aroma of chocolate. Chocolate beans grows in tropical and hot climates such as West Africa and South America. Each cocoa pod fruit contains 30 to 50 large seeds, cocoa harvested throughout the entire year.
However, it does cause deforestation and damage to surrounding lands if not managed carefully. Once removed from the pod, seed are fermented, dried by sun, grounded before the chocolate and cocoa butter extraction process starts. It is very labour intensive and a labour of love for the farmers to collect the pods, and ferment the seeds.
